Located in the Vale of the White Horse in South West Oxfordshire, Hatch's Honey is a small scale, primarily one-person beekeeping operation that began in 2023. After years of expressing an interest in beekeeping, I was gifted some vouchers for beekeeping equipment, which led to the establishment of the two hives pictured here, which were home to my very first bees. My goal now is to produce local natural honey exactly as the bees intended it for everyone to enjoy.
I didn't set out with a plan to produce honey to sell, but it turns out that beekeeping is highly addictive. Those two hives quickly grew to five, and it became clear that I had more honey than my family and friends could consume. To find a suitable outlet, I took some tentative first steps in selling local honey to colleagues and neighbours, and I sold out in no time at all.
Today, there are 17 hives across two apiaries, and the kitchen is transformed into a honey house twice a year for a few days. During this time, extractors, tables, and tanks are set up, while efforts to contain the process with plastic sheeting often fail, allowing local honey to flow onto the floor and surfaces. I argue that this showcases the beauty of natural honey production - this is disputed by other members of the household.

Runny Summer Honey - made largely from hedgerow flowers in the fields surrounding the hives - £6.50 for 340g (12oz)
Runny Spring Honey - similar to the summer honey but a little sweeter and milder - £6.50 for 340g (12oz)
Chunk Honey - A generous piece of honeycomb in a jar topped up with summer honey - £8.00 for 340g (12oz)
Cut Comb Honey - a piece of honeycomb containing honey just as the bees made it - £9.00 for at least 227g (8oz) - it usually weighs more
Soft Set Honey - Coming in Autumn 2026

With bees making all of their honeycomb from wax, a by-product of the extraction process is (a surprisingly small amount of) wax.
I have already used this to make leather conditioners and polishes and during the Autumn and Winter of 2026 will be looking to develop my candle making skills.

Mead, or honey wine, has been made by humans for millennia and in recent years has made something of a comeback in the UK. Pictured here are three types made by me since last Autumn; traditional Mead, Melomel which is mead flavoured with fruit - in this case Raspberry and Blueberry, and finally Metheglin where the added flavouring in mine comes from cinnamon and vanilla.
Mead is a taste that I have not personally acquired. I have however acquired a taste for Honey Rum in the style of Canarian Ron de Miel. No picture of that as it doesn't last long enough.
With no alcohol licence I cannot sell any of the alcohol products but I am more than happy to provide a recipe.
